THE FRESH GINGER EGGNOG

I've always found the idea of drinking eggnog pretty compelling. In my pseudo American Christmas fantasies, I am drinking warm eggnog from one of those cute cups and listening to Zooey Deschanel sing Christmas carols. In reality, I am running my finger desperately around the outside of the glass to catch the last of this stuff. It's really quite good. Dairy-free. Refined-sugar free.

The Recipe

800mL coconut milk

4 egg yolks

vanilla pod (you can use essence too, about 1/2 tsp)

3 tbsp good-quality honey

1/8 tsp nutmeg - grated or powdered

Extra nutmeg, cinnamon, cacao power for decoration

Splash of brandy (optional)

The Method

Put everything but the garnish (and brandy) in a saucepan and whisk before simmering, whisking intermittently, for about 10 minutes. Don’t let that puppy bubble or boil. 

Serve warm or cold (it will become thicker the cooler it gets) over brandy, or over dessert, like custard.
